Simple pasta sauce



Hurray stepping into Italian. Me always bit skeptical to cross my comfort zone in cooking , So on a bit of challenge note , started making it my way

Ingredients:
- onions 1
- Tomatoes (preferably tin chopped/purée )
- Garlic 3 cloves
- Garlic paste
- herb mix (basil,oregano,bay leaves)
- cumins
- olive oil
- pasta (Use any form of pasta i used Fusilli)
- black pepper
- Cheese

Method:

- Boil the pastas on one side
- heat olive oil in other.
- pop in cumins and finely chopped onions
- add little salt to speed up the process
- add garlic cloves after a min
- add the tomatoes and cook till they are completely mashed up
- If it becomes too dry sprinkle some water
- add the garlic purée and rest of the herbs.
- stir till becomes concentrate enough and add black pepper powder
- pour in the hot pasta sauce over the cooked pastas
- add some shredded mozzarella and

be ready to dig in

Minced Paneer and peas side





My 2 most fav ingredients paneer and green peas goes together to make this tangy dish.

Ingredients:

- Paneer cubes - 15 to 20 cubes approx(Indian cottage cheese)
- peas 100gms (preferably frozen or microwave for 2 mins)
- chili pepper 2(green/red)
- cumin seeds
- onion 1
- tomato 1
- hot curry powder (turmeric,coriander,chili powder)
- cilantro

Method:

- heat 2 spoons of oil in a small pan
- add cumins,onions one after other
- let it brown a bit , add chopped chilies
- add diced tomatoes and cover it (simmer heat)
- after 2 mins add curry powder
- add frozen peas and cover and cook for a minute
- now sprinkle some water
- add the minced paneer and mix it well so that paneer pieces gets well marinated.
- switch off after 2 mins
- finish with sprinkle some lime juice and cilantro.


Serving:
-Paratha , roti , chappathi as sides
- bread as fillings

can be defrosted for later use.

Grated carrot sandwich






Very simple carrot breakfast dish.
Ingredients:
Carrots - 2 medium size
Garlic - 2 cloves
Green Chili pepper 2(see to your spice levels)
Onions - 1/2 to 1
Paneer/indian cottage cheese(optional)
Cumin seeds
Bread - 2 to 4 slices
salt
spice powder(can be garam masala or any hot curry powder)
Butter

Method:

1.Filling

- Grate carrots to thin stripes
- peel the garlic and slice it
- onions and pepper cut it into slices
- hop on above stuff into hot non sticky pan (with hot oil)
- let the cumins splatter and add the onion and garlic
- fry them 3-4mins till they are dark brown (add little salt to make them fast)
- add slit green chillies and any masala powders
- add carrots and fry til they are dry dark red (3 mins)
- add optional paneer and fry
- sprinkle some water if things get over burnt
- drop few cilantro over and finish it.

2.Breads

- Toast your bread
- spread the butter while hot piece them into triangles

3.Finishing touch

- stuff in the carrots fillings and you are ready to go.
